A luscious pie made with flax seed

Crust:
8 strawberry non-frosted Pop-Tarts
1/4 c vegetable oil
1 1/2 T vanilla extract
1/4 c light pancake syrup
1/4 t salt
Filling:
2 1/2 T fresh lemon juice
2 1/2 t fresh lemon rind
3/4  c sugar
1/4 t salt
2/4 c water
2 3/4 T flax seed
1/3 pack raspberry Jello Mix
1/4c  all purpose lour
meringue to your taste
  1. Bake the crust at 300 until golden brown.  Let cool and keep cool.
  2. Cook the filling ingredients over medium heat until pasty. Remove from heat and let cool.  Pour filling into crust and refrigerate until hardened, about 3 hours.

Women of all ages and backgrounds come from every part the world

There is a great depth of experience that comes from the diversity of women who touch our lives at the College Club. Women of all ages and backgrounds come from every part the world to live at the College Club, each with a unique story to tell. A number of residents are forging new paths with changing jobs, programs of study, or personal goals. 
Many stay for a brief time while exploring new opportunities or phases in life and others remain for more than a decade. Some women bring stories of fame and success while others talk of heartbreak and loss. All together this experience fosters a sense of individuality and belonging that supports endless personal growth. There is no other place like this, our College Club home.

Why I live at the College Club

  1. Beauty.  I am surrounded by beauty in this handsome Georgian Revival house, built by Buffalo attorney, Philip Sherwood Smith,  in 1904.  (See more pictures of that beauty here.)
  2. Sorority.  How pleasant to walk into the kitchen at supper time.  I pull up a chair to hear the chatter of other residents' events of the day.  "Won't you have a glass of wine?" someone asks.
  3. Neighborhood.  The Elmwood Village neighborhood of Buffalo is where to find the College Club.  Rated as one of the top urban neighborhoods in the country, it is close to downtown and features the best of shopping, architecture, parks, and art of all kinds.
  4. Thrift.  What is thrift, anyway?  Thrift means being smart.  It means being a good steward of resources, whether the resources are money, time, energy, or the environment.  Being thrifty means being mindful--valuing what one has and treating it well.  Thrift is respected at the College Club.
  5. Serenity.  Rich in its past, my Buffalo oasis is quiet and peaceful in its present.  Ahh ...
